Devil Made Me Do It Chocolate CakeSatchel (his real name is Steve Raye) is an amazing person, and his restaurant reflects his unique personality and intense creativity. He’s one of the most interesting guys I’ve had the pleasure of meeting in my five years of doing “Taste of the Town.” I went back to visit Satchel at his home the Wednesday before Thanksgiving, and we had a great time talking about his two main passions: food and art. His restaurant has an interesting collection of his artistic creations – many of them are made from things people have thrown away. He turns other people’s junk into eclectic, beautiful art.

He serves a chocolate cake with cream cheese frosting that’s homemade and unique.

Devil Made Me Do It Chocolate Cake

Makes three 9-inch round layers

2 2/3 cups flour
3 cups sugar
1 1/8 cups cocoa powder
1 tablespoon baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
3 eggs
1 1/2 cups buttermilk
1 1/2 cups brewed coffee
3/4 cup vegetable oil
1 teaspoon vanilla extract

1. Preheat the oven to 350 degrees F
2. Put all the ingredients in a mixing bowl and stir, starting out slowly, until well blended
3. Divide the batter among 3 greased 9-inch round pans
4. Bake at 350 degrees F for 30 minutes, or until a tester comes out almost clean.

Cream Cheese Frosting

1/4 pound (1 stick) butter, softened
8 ounces cream cheese, softened
12 cups confectioner’s sugar
1 teaspoon vanilla extract
2 to 4 tablespoons milk (just enough to smooth out the frosting)

1. Beat together the butter and cream cheese
2. Beat in the confectioner’s sugar and the vanilla.
3. Add milk until the mixture is creamy.
4. Frost the top and sides and between the layers of the cooled cake thickly!

Christmas Cake Recipe

Want to spice this cake recipe up for the Christmas holiday? Create two batches of delicious cream cheese frosting. Add some red food coloring to one batch and green to the other. Use the green cream cheese frosting between your layers and then cover the Christmas cake with the red frosting. Your family will love it.
